April Birthday Breakfast

As part of my calling as an enrichment committee person, I was in charge of birthdays for March and April. Denise D. helped me in March but she was in Utah this time. I did the same menu. In March we had 6 and this time 8.
A variety of muffins served as the "cake".Two packages of mixed frozen fruit along with one carton of fresh strawberries and some banannas made up the fruit bowl.
Here is the Eggs and Cheese Ole' recipe -
6-8 eggs beaten
1-2 cups Monterey Jack, Colby or Cheddar Cheese or a mixture of these or "Mexican Cheese" mix with jalapenos
1 stick butter or margarine (melted)
1 cup milk - any type
1/2 ro 3/4 c flour (depending on how thick you like it)
1 tsp baking powder
1 1/2 cups small curd cottage cheese1 8 or 10 oz can tomatoes and green chilles, drained (I used some salsa)
Stir all ingredients together in a bowl. Pour into a buttered 9 x 13 inch pyrex baking dish and bake at 350 degrees for 25 -30 minutes until brown and puffy.
This freezes well and can be reheated in the microwave.

Here are the cookies to take home.The goodie bags had some bath fizzies in them.It turned out well and we had fun. I wish I had taken a picture of the group - Judy P, Connie F., Elaine Q., Rebecca T., Kristen W., Diane C., Evelyn A. and me.

Wow, Mom you're amazing! What a great idea to celebrate birthdays that way. I'll have to pass that ideas along--at least before September!! :-)

You did a great job!! Our ward does nothing like that. Very fancy and I wish I had your talent to make things so cute and decorative! It's so wonderful that you have such great friends. I know they will all miss you very much when you move out here! I'm glad you are creating some good last memories!
